In my quest to find healthier lower calorie "desserts" I ran across chia seed pudding and just had to try it. I love tapioca and rice pudding so I thought it would be similar but have more health benefits. Chia seeds are suppose to have more antioxidants than blueberries.
I mixed one cup of vanilla almond milk to three tablespoons of chia seeds and let it chill overnight. The next morning I had a bowl for breakfast and it was delicious. It was lightly sweet and so quick and easy to make. You could add fruit or fruit purees to customize it to your liking.
